This trip is one we always look forward to, the feeling of going “home” for Javier, the inspiration we bring back, and the incredible food and culture. After our staff trip earlier this year, we are so excited to be doing it again, but this time taking a small group with us! We would love to have you join us.

Spring 2026

 Seville/Granada/Cordoba/Malaga

While Chef Javier is known more for his Basque roots, his father’s side of the family stem from Madrid and Andalusia. It is where his grandfather had a restaurant, and where his love of food really began. This is a unique opportunity to explore the fascinating history, culture, and of course incredible food of Andalusia. Join Javier, Jael, and Aundre on this amazing journey.

Day 1 Seville Arrival

Seville is approximately 2,200 years old. The passage of the various civilizations instrumental in its growth has left the city with a distinct personality, and a large and well-preserved historical centre. Let’s celebrate with a welcome dinner, and get this thing going!

Day 2 Seville

Tapas Crawl! The best way to get to know the city, as we stroll around to some of our favorite neighborhoods and tapas bars. Casa Morales, Palo Cortao, and Las Golondrinas in Triana to name a few. The Evening is free to explore, or meet up with us for a glass of rebujito (Jael’s favorite sherry cocktail).

Day 3 Seville

Join us for a morning cafe con leche and proper Andalucian breakfast, then we tour the beautiful Jardinas Alcazares and the famous Seville Cathedral, the largest of its kind in the world. After an afternoon rest, we’re off to dinner at one of Javier’s favorites.

Day 4 Cordoba - Granada

Oh beautiful Cordoba, where Javier’s grandmother is from. Cordoba’s history dates back to an Iberian settlement occupied by the Romans in 169 B.C. In the 10th century it flourished into one of the largest cities in the world. Today, it is well known for thousands of years of occupation by different cultural groups, including the Romans, Visigoths, Muslims, Jews, and Christians. As we arrive in the morning, we’ll grab a tea at one of our favorite Moorish tea houses. Followed by a pastel Cordobés, one of the city’s best pastries (and a favorite of Aundre). Then, we are off to tour the incredible mosque in the center of the city. Lastly, we end with a lunch at hands-down one of our personal favorite restaurants on the trip. Later that evening we arrive in Granada. Have a rest, or join us at the near by Plaza de Bib Rambla for a nightcap.

Day 5 Granada

Nestled among the foothills of the Sierra Nevada mountains, where ancient Islamic history meets the Spanish Renaissance, Granada was the final stronghold of the Moors in Spain until 1492. This fascinating history results in some of the most unique and beautiful sites in Andalucia. After a morning meetup, we are off to the top of the city to see the stunning views at el mirador de San Nicolas. Next, a traditional meets modern lunch. Then, a walk down to the Albaicin Moorish quarter for some shopping, and a possible digestif. The evening is free to explore, but join Javier, Jael, and Aundre for an evening mini-tapas crawl if you like!

Day 6 Granada

Let’s start the day with some churros (or porras, the churros cousin) sitting in the beautiful Plaza Nueva! Next, we are off on a private tour of the Alhambra, a renowned palace and fortress, standing as the most prominent monument of Moorish architecture. After, we grab a couple tapas and siesta. We end the day with a dinner, followed by a vibrant flamenco show!

Day 7 Malaga

Welcome to the gorgeous and sunny Costa del Sol! The Phoenicians were the first civilization to establish a settlement in Malaga, around 770 BC. Today, Malaga is a bustling city with a rich history and vibrant culture. Join us for a morning walk exploring some of our favorite neiborhoods including Old Town, Soho, and La Merced, and probably run into some tapas along the way. Then we stop for a modern lunch (a Javier favorite). The evening is free to explore, but you can find Aundre having a cocktail at his beloved, The Pharmacy (not an actual pharmacy).

Day 8 Malaga

Want some insights and secrets to what Javier does at Urdaneta? Today is your day! We start the morning with an intimite olive oil tasting in the Malaga countryside, followed by a private cooking class lunch with Javier, using the bounty of fresh and local ingredients of the area. After a much needed afternoon siesta, join us for an evening tapas crawl in Old Town starting at one of our favorites El Pimpi.

Day 9 Malaga End

We end the trip with a free morning, and recommend using this time to visit El Museo Picasso. Housed in the prior Buenavista Palace, you will find 233 original works of the famous artist. Later in the early evening join us for a relaxed beach walk, some espetos (famous grilled sardines, a Javier must!), and lastly a delicous seafood paella on beach. A perfect way to farewell…for now.
